I am not really a personal fan of Mala, but this noodle's broth's mala is just nice and does not overpower the beef soup base. This is something that is important when we're eating a dish as such. Other than the mala taste that should be present in Si Chuan cuisine, there must also be a balance between how the beef broth should taste alongside the spices. If too many spices are added, you'll just be tasting the mala spices and not the nutritional tasty beef broth. This is definitely a must-try noodle dish that's just rich and the meat is superbly tender.

This noodle is recommended for people who are looking for something light and non-spicy. It's a simple dish that's suitable for people who wants to fill their stomach after a long night of drinks. It's the perfect hangover-soup for those who want to satiate their hunger. The meat goes really well with the dish but I believe the dish could do better with a richer base instead. If a choice were to be made, I'll prefer the mala broth to accompany my noodles instead.

Eggplants are one of my all-time favorites, but it's usually quite difficult to ensure that the dish tastes really good. The one made by Chuan.Grill & Noodle Bar is commendable as the dish is grilled optimally, giving it an overall juicy and it's non-mushy at all. The results of the perfect-control that's rarely seen. Over-grilling it will cause this dish to lose its moisture and it will end up being too "mushy", as a result, the overall taste will be ruined. That is why I gave this dish full-marks as it tastes superbly good.
