One of the must not miss delicacy during new year is none other than the Yu Sheng, Prosperity Toss, also known as "Lo Hei" in cantonese. The purpose of the toss symbolizes abundance, prosperity and vigor. The act of placing more ingredients determines the amount of abundance due to their believes in the fact that the more fish according to the chinese term "年年有余" signifies an abundance throughout the entire year.
